For Sammy, I made Lemon Burst Cookies dusted with powdered sugar to match his sweet, sunny disposition. He lights up every room that he walks into, and so I knew that his cookies had to be citrus and light as air.
The cookies don’t look anything like the picture on the blog, but they are light and lemony, without being overwhelmingly sweet.
Baking tips: I used both vanilla and lemon extract, but if you’re a big lemon fan, you could probably replace all of the vanilla with lemon and get an extra citrus-packed punch. Unf. Let me know if you give it a try!
I don’t know if the powdered sugar will survive the mailing process, but warm ‘em up, add more powder, and they should be good to go.
